Can you create a website using multiple CMS's, or is it wise to just stick to one?

Do you mean CMS integration such as Joomla + Phpbb ?
You can integrate some CMS, but you must make sure you`re not putting it in the same directory when you're installing them though, so that they don't overwrite each other
