Choose the right OS

There has been much debate on the server level about Windows vs Unix, Unix vs Linux, Windows vs Solaris, and other matchup you can imagine. Choosing the right one for your server might be very difficult. You have to consider lots of factors when choosing your server's operating system. For me, the most important factor should be Security and Stability.
What are you looking for in an Operating System?

I agree that security and stability should be tops. You need to protect your files, and you ned to make sure your customers can view your site at any time without interruption.

For PHP, I use Linux
For Windows Home Server, I use Windows Server 2003
For SharePoint Foundation 2010, I use Windows Server 2008
