If I want a group/company to stop emailing me, does sending them an email with the word "unsubscribe" as the subject get them to stop? Does it work in most cases?

That works for some mailing lists. Look for specific unsubscribe instructions within the email.
However, many spammers use unsubscribe requests as confirmation that an email address exists, so tread carefully.
