Do you use the same process to block your cell phone from caller ID no matter what kind of phone you have? And after you block your number, is there a way to be sure that your number really is blocked without actually having to call someone?

It depends on your country and carrier.
If you live in Canada and use Telus Mobility, you can use per-call-blocking (*67).
There appears to be an exception when dialing toll-free numbers. Since they are paying for the call, per-call-blocking doesn't always work.
