I'm trying to laucnh a diet, again. Anyone know any good low-calorie snacks I could eat before I break down and start having chips and beer again?

Low-calorie diets have poor results for weight-loss. Try the paleolithic diet (AKA The Primal Blueprint):

I've been following the paleo diet since November. I feel fantastic, have been gaining muscle with very little effort, and rarely feel hungry.
