Anyone have any advice about how to learn more about your kids' online activities? Are there ways to monitor what they've posted about themselves?

For your first question, you can monitor your kids using Family Safety:

Family Safety - Windows Live

This only works on Windows.

Family Safety only monitors the sites they visit. As for monitoring what they actually post, I'm not aware of a consumer application for that.
